Tiramisu is the king of Italian desserts. Traditional tiramisu does not require baking, making it the perfect dessert for both festive tables and a cozy evening treat.

Ingredients (6–8 servings):

For the cream:

  • 500 grams of mascarpone cream cheese
  • 4 egg yolks
  • 150 grams of sugar
  • 250 ml heavy cream (33%)
  • 1 tsp vanilla extract or vanillin

For the layers:

  • 200–250 grams of biscuits (Savoiardi)
  • 250 ml strong brewed coffee (cooled)
  • 2 tbsp cognac

For topping: Unsweetened cocoa powder for dusting

Preparation:

1. Prepare the cream:
Whisk the egg yolks and sugar using a hand whisk or mixer until the mixture becomes light and foamy.
Add mascarpone and continue whisking on low speed.
Separately whip the cream and gently fold it into the mascarpone mixture.
Add vanilla and, optionally, the cognac.

2. Soak the biscuits:
Dip each quickly into the coffee (don’t leave them in too long so they don’t fall apart).

3. Assemble:
Place a layer of soaked biscuits into a dish.
Spread a layer of mascarpone cream on top.
Repeat the layers once more.
Finish with a final layer of cream on top.

4. Chill and decorate:
Cover with plastic wrap and refrigerate for at least 4 hours (preferably overnight).
Before serving, dust the top with cocoa powder using a fine sieve.

Tips: You can make a modern version by adding chocolate or fruit.
If you don’t want to use raw eggs, use pasteurized ones or prepare the cream over heat (using a bain-marie method).
