I absolutely love Middle Eastern sweets. Soft, fluffy, aromatic, and sweet — they’re simply delightful.

“Rahat-lokum” translates from Turkish as “comforting pieces.” Today, we’ll show you how to make fruit-based Turkish delight with walnuts.

Ingredients:

  • 1 cup sugar
  • 2 cups water
  • 100 g shelled walnuts
  • A pinch of vanilla sugar
  • 1 cup powdered sugar
  • Juicy berries or fruit without stems (e.g., strawberries, raspberries, plums, apricots)
  • 1 cup corn starch (you can substitute with potato starch if needed)




Instructions:

  1. Blend the fruit into a smooth purée.
  2. To one-third of the fruit purée, add vanilla sugar and 1 cup of water. Place on low heat.
  3. In the remaining fruit purée, mix in the corn starch and 1 cup of water. Gradually add this to the warm fruit mixture on the stove, stirring continuously. Cook for 2–3 minutes until it thickens.
  4. Remove from heat and stir in the walnuts.
  5. Take a sheet of parchment or food wrap and shape it into a rectangle. Spread the mixture evenly across the surface.
  6. Let it sit and set for about 8 hours.
  7. Once firm, cut into cubes using a sharp knife or mold, and dust each piece with powdered sugar.
