I absolutely love Middle Eastern sweets. Soft, fluffy, aromatic, and sweet — they’re simply delightful.
“Rahat-lokum” translates from Turkish as “comforting pieces.” Today, we’ll show you how to make fruit-based Turkish delight with walnuts.
Ingredients:
- 1 cup sugar
- 2 cups water
- 100 g shelled walnuts
- A pinch of vanilla sugar
- 1 cup powdered sugar
- Juicy berries or fruit without stems (e.g., strawberries, raspberries, plums, apricots)
- 1 cup corn starch (you can substitute with potato starch if needed)
Instructions:
- Blend the fruit into a smooth purée.
- To one-third of the fruit purée, add vanilla sugar and 1 cup of water. Place on low heat.
- In the remaining fruit purée, mix in the corn starch and 1 cup of water. Gradually add this to the warm fruit mixture on the stove, stirring continuously. Cook for 2–3 minutes until it thickens.
- Remove from heat and stir in the walnuts.
- Take a sheet of parchment or food wrap and shape it into a rectangle. Spread the mixture evenly across the surface.
- Let it sit and set for about 8 hours.
- Once firm, cut into cubes using a sharp knife or mold, and dust each piece with powdered sugar.
