The cake we’re sharing with you today will surprise you with its simplicity and incredible flavor. Pārsla means “snowflake” in Latin, and it truly lives up to its name — every bite of this dessert melts in your mouth like a snowflake falling to the ground.
Sponge Cake Ingredients:
- 120 g flour
- 4 eggs
- 120 g sugar
- ¼ tsp vanilla
- 1 tsp baking powder
- A pinch of salt
- Cocoa powder (for dusting)
Cream Ingredients:
- 200 g cottage cheese (with 9–15% fat)
- 100–120 g sugar
- 250 ml heavy cream (33% fat)
- ¼ tsp vanilla
Preparation:
- In a deep bowl, crack the eggs and gradually add the sugar while whisking.
- In a separate bowl, combine the flour, baking powder, salt, and vanilla. Add this dry mixture to the egg mixture in medium portions, stirring as you go. The batter should be of medium thickness.
- Line a baking tray (approx. 20 x 30 cm) with parchment paper and lightly grease it. Spread the batter evenly into a rectangular shape. Bake the sponge for 10 minutes at 200°C (392°F).
- For the cream: mix the cottage cheese, sugar, and vanilla, then blend until smooth.
- Whip the cold heavy cream until thick, then gently fold it into the cottage cheese mixture.
Cut the sponge in half. Spread ⅔ of the cream on the bottom layer, place the second sponge layer on top, and spread the remaining cream over the top. Dust with cocoa powder and refrigerate for at least 2 hours.
