Probably all of us had Ponchiki during childhood, and their taste was truly unforgettable. I grew up and spent years searching for that recipe that would bring back the taste of childhood. None of the ones were as airy and tasty. Finally, completely by chance, I found this miracle in my grandma’s notebook! When I made them at home and my kids tasted them, they were thrilled — and ever since, I have to make them almost daily at their request.

The most delicious and airy Ponchiki recipe
Needed ingredients:
Cream:
- Milk – 250 ml
- Vanilla
- Sugar
- Starch or flour
- Egg
Dough:
- Flour
- Egg
- Yeast
- Sugar
- Oil
- Milk
- Salt
Preparation method:
Sift the flour, mix in the yeast, sugar, and salt. Then add the egg, oil, and warm milk. Knead the dough. Let it rise in a warm place.
While the dough rises, prepare the cream:
Boil three-quarters of the milk with sugar. Mix the remaining milk with the egg and flour. Stir well. Then slowly pour the hot boiled milk into the egg mixture in a thin stream while stirring constantly. Place on heat and cook until thickened. Add vanilla and let it cool.
Pour oil into a pot and heat well over medium heat. Divide the dough into egg-sized balls, flatten them and place some cream in the center. Close the dough around the cream and fry in hot oil on both sides. Transfer the ready Ponchiki to a paper towel to remove excess oil. Sprinkle with powdered sugar while still warm. If you mix about 60g of melted white chocolate into the cream, it will be even tastier.
You can change the Ponchiki filling as desired — instead of cream, you can use jam, Nutella, or anything you like.
