This quick khachapuri recipe is exactly what you need! Ingredients for the dough and filling:
- 400 g flour
- 1 cup kefir
- 1 tsp baking soda
- 1 tsp salt
- 300–400 g cheese
- Fresh herbs: dill, parsley, coriander
- Butter
Ingredients for the sauce:
- 200 ml matsoni (or plain yogurt)
- 2 garlic cloves
- 3 tbsp chopped herbs
Preparation instructions:
- Mix kefir with baking soda and let it sit for 5 minutes.
- Combine the flour with salt, then add the kefir mixture and knead until the dough becomes elastic.
- Dust the dough with flour, cover with a towel, and let it rest for 10 minutes.
- Grate the cheese and mix it with chopped herbs. Add salt to taste.
- Divide the dough into 5 parts, roll each piece flat, place the cheese filling in the center, and seal it.
